Lasagna with cepes

I am on a low carb diet. I’ve lost 4 kg in a couple or three weeks (taking it easy). But today I wanted to cook something nice. We got a pot of cepes mushrooms in the supermarket (no hopes of ever finding that fresh here) and I made lasagna. I like to make every layer in my lasagna different. I think I tend to make them too watery (tomato) so today I tried to make it drier.

I put a big pot of water to boil, with a bit of salt and oil, for the lasagna leaves. When they were ready I strained them, then laid them over a clean kitchen cloth.

I cut an onion in small pieces, fried it a bit at a lowish fire, and then added a small courgette (zucchini?) cut in quite small pieces. I fried (I use a wok-like pan) it for a while, with a bit of salt. I put part of this aside, this made layer 4.

I added fresh garlic with the green parts (3 or 4) and 2 tiny fresh shallots. I reserved a little bit of the green parts of the shallots for use on top layer. When it was all a little cooked, I added some tomato concentrate pasta (in a tube), and let it simmer for a moment. I reserved part of this, which made layer 1. Then I added some passata tomato puree, dried parsley and oregano, salt and pepper. I let it simmer for a few moments and put it away, this made the top layer (6)

In another pan I fried (with no oil actually) some Quorn dices that I defrosted and cut in very small pieces. Then I put them aside. I added a little oil to the pan and fried the cepes, then put them aside.

I put a leaf of pasta on the tray, then I spread the drier tomato sauce over it, and a few very thin slices of goat’s cheese. Next layer, the Quorn and a few pine nuts. Layer 3 was half of the cepes with rosemary and a few little pieces of mozzarella cheese. Layer 4, the fried onion with courgette and a few fresh leaves of basilicum. 5 more cepes, with rosemary and black pepper. 6 was the saucier tomato sauce, with fresh basilicum leafs and a little of shallot green parts. Yes I know! I make it complicated because I have fun ;P

Then I put the mozarella on top, fresh chives on top of it all, and I grilled it:

It was yummy, so YUMMY!!

  1. I’ve never seen them or heard of them before… not sure I would be able to find them (I can always go to Hungary I guess ;P). Maybe they even go by a different name here.
