Carrot cake with Philadelpia icing

3 eggs

2dl sugar

2dl flour

2 teaspoons baking soda

2 teaspoons cinnamon

1 sachet vanilla sugar

½ dl of oil

3 dl grated carrots

Pinch of chilli or a knob of grated ginger (optional)

Whisk eggs and sugar, add the dry ingredients, and finally add oil, carrots and chilli/ginger.

Stir well, until smooth

Pour into greased oven tray and bake 175 degrees for ca 30min

Let cake cool

For the icing:

75g Philadelphia cheese

30g soft butter

2-3 dl powdersugar

1sachet vanilla sugar

Mix in a bowl until smooth and lump free, spread over cake

A cake that I haven’t baked myself, but a coworker brought to work, and it was excellent! I must bake it some day.
