1/2 cup dark brow sugar
1/4 cup white sugar
1/2 cup oil (I used olive but maybe sunflower would be better, and I put a little less than 1/2)
2 beaten eggs
1 cup cooked pumpkin (I used more, perhaps 1 1/2)
1 1/2 selfrising flour
1/2 teaspoon salt
3/4 teaspooon cinnamon
little bit powdered nutmeg and clove (about 1/2 teaspoon togheter)
1/2 teaspoon powdered ginger
Mix togheter sugars and oil. Add eggs and mashed pumpking and mix well. Sift the flour, salt and spices togheter and add bit by bit to the mixture while you mix. Add nuts and raisins and mix.
About cooking, just cook until it is baked, I use mix of heat and microwave so it is very fast, 30 min or so. In a normal oven it would take double or more I think.
It’s yummy! but I think I cooked it a bit too much, a bit too crunchy ;P
