Pumpkin Cake

1/2 cup dark brow sugar

1/4 cup white sugar

1/2 cup oil (I used olive but maybe sunflower would be better, and I put a little less than 1/2)

2 beaten eggs

1 cup cooked pumpkin (I used more, perhaps 1 1/2)

1 1/2 selfrising flour

1/2 teaspoon salt

3/4 teaspooon cinnamon

little bit powdered nutmeg and clove (about 1/2 teaspoon togheter)

1/2 teaspoon powdered ginger

75g nuts

50g raisins

Mix togheter sugars and oil. Add eggs and mashed pumpking and mix well. Sift the flour, salt and spices togheter and add bit by bit to the mixture while you mix. Add nuts and raisins and mix.

About cooking, just cook until it is baked, I use mix of heat and microwave so it is very fast, 30 min or so. In a normal oven it would take double or more I think.

It’s yummy! but I think I cooked it a bit too much, a bit too crunchy ;P

        1. The pumpkin I used was tiny (the big ones just go bad ;P) I used half for soup and almost the other half for the cake, and it was almost yellow outside, but orange inside.

      1. Ha i’m going thru your journal oto save some receiepes and stuff right now. I can’t find the one where you dided your hair with henna, i wanted to look at somethgin i remember you said but can’t remember what it was aout the fact you need to use something so your hair takes the color better lol Ws it vinegar you mentionned ? LOL

        1. Yeah, vinegar, lemon or yogurt are needed so the henna releases the dye, as water alone doesn’t have enough acid. I don’t henna anymore, that’s why its not there.
