Apple cake wih cinnamon and orange juice.

3/4 cup white sugar

3/4 cup brown sugar

2 cups self rising flour

3 eggs

3/4 cup oil

1 vanilla bean

1/2 cup orange juice (tetrabriked)

1/4 teaspoon salt

Cut the vanilla bean in little pieces and put in a glass with the orange juice, warm for a moment in the microwave and let rest. Beat the eggs and add the oil and the sugar. Sift the flour as you slowly add, mixing well all the time. Add the strained oranje juice and the salt.

Apple Mixture

3 large apples, peeled — cored and finely sliced

4 teaspoons brown sugar

1 teaspoon cinnamon

Mix everything, I added a bit of lemon juice to the apple to avoid it to turn brown.

Grease the mold and make a couple of layers of batter and apples, beginning with batter and ending with apples. I put some sesame seeds on top, and a bit more cinnamon.

Bake at 220ºC, until kinfe comes out clean. I baked at combination heat 220ºC + 450 microwave for 25 minutes. It was about half of the amount… This is a lot of cake, my mold is a smallish cake one, so I had to bake it in two times…

This is my recipe for the next time, so it fits in my cake mold:

1/2 cup white sugar

1/2 cup brown sugar

1 1/2 cups self rising flour

2 eggs

1/2 cup oil

1 vanilla bean

3/4 cup orange juice (tetrabriked)

1/5 teaspoon salt

Apple Mixture

Note: We have this bad habit to eat the cakes when they come out of the oven. Pim has already eaten 3/4 of the first batch cake…

I made this in honor to Samhain, as Pim wants real cake if I keep on smelling of it (that it what he says anyway, but now I kinda see the resemblance)
